I made ketchup over the weekend using this recipe. I'm repeating the recipe here with better instructions and a few suggestions gleaned of the weekend's experience.
4 cups tomatoes, chopped
3/4 c. tomato paste
2 cups onion, chopped
1 green pepper, cut into 1" cubes
1/4 c. sweetener (sugar, brown sugar, corn syrup, honey, molasses)
1 bay leaf
1/4 t. ground cloves
1/4 t. ground mace
1/4 t. ground black pepper
1/4 t. dry mustard
1/8 t. allspice
1/8 t. ground cinnamon
1 t. garlic, finely minced
1/4 c. malt vinegar
2 T. finely grated fresh ginger or 1 t. ground dried ginger
1/4 - 1/2 t. chili powder
1/4 - 1/2 t. hot chili pepper flakes
1 T. finely minced garlic
Combine tomatoes, paste, onion and green pepper in a heavy saucepan. Bring to a boil, then simmer for 30 minutes.
Put in blender or food processor and blend smooth (you will have to do this in batches - it won't all fit in one blender container). Return to saucepan and add remaining ingredients.
Bring to a boil and simmer another 10 minutes. Remove bay leaf and return to blender or food processor and blend smooth again.
Makes approx. 3 pints of ketchup.
